I eat chicken/fish, veggies: mostly bell peppers, baby carrots, iceberg lettuce and olives, gg bran crackers, atkins bars, eggs, turkey sausages, my own soda sweetened with stevia, water, tea, heavy cream, unsweetened chocolate powder, almond milk, sunflower and pumpkin seeds, organic unsweetened peanut butter- santa cruz has no sugar added, fruit, mostly strawberries and blueberries which are low sugar, fage 0% yogurt- I add some fruit, pumpkin seeds, flavored stevia and vanilla for flavor, cheeses which are no carb for the most part, Olive oil, almond oil, butter. I'm going to be trying some low carb recipes for pancakes with almond flower, flax meal and coconut and I plan to purchase some Julian low carb and 0 carb bread to try too.
I'm sure I will add more things into my diet as time goes on- I have a lot of restrictions currently due to being on warfarin unfortunately. Most of what I eat is prepared by me. I haven't noticed a lack in salt, but I did try adding some in and added too much to a salad- it was too much. I think I'm getting enough salt though.
As far as the fat goes it seems to be ok for me without all the carbs, so far, I'm sometimes have trouble with fat digestion. I'm on 30-40g C per day. I was not overweight but I lost 20 or so pounds leading up to my diagnosis and then gained about 5-6 back in and after the hospital, some was due to dehydration no doubt. Now I am holding steady at 119 or so, I lost two pounds recently, but I'm a healthy weight for me.
I'm not sure if I need more salt though.
