Besides the TV advertisements and the pageantry, what's the best thing about the Super Bowl? THE FOOD! I thought I'd get together some ideas for some lower carb options.
First up, I'm going to mention Josh's Cheesy Wing Dip
Which could be the centerpiece of your crudites platter. I'd include something pickled on that, like these Carrot Tapas
4 carrots, cut into sticks approx 3"x1/2"
2 Tbl. white wine vinegar
1 1/2 Tbl. water
1 clove garlic, crushed
1/4 tsp oregano
1/4 tsp cumin
1/4 tsp paprika
cook carrots in simmering chicken broth four or five minutes. Drain.
Put in a plastic bag with the rest of the ingredients. Marinate several
hours or overnight.
Another Dip I love is Caesar Dip, inspired by the ingredients in Caesar Salad
1 cup mayonnaise
1/2 cup sour cream
1/2 cup finely grated Parmesan Cheese
1 Tbl. lemon juice
1 garlic clove pressed or finely minced
1 anchovy fillet, mashed
serve with veggies and or small romaine leaves (also great with crostini, thinly sliced toast w olive oil)
How about some Skewered Items? Banderillas are a Spanish Tapa, you skewer bite sized pickles, pickled onions, cheese, roasted red peppers, olives, shrimp (use your imagination) on long toothpicks - very colorful!
Chicken Sates with Peanut sauce.
2-4 TB. SATÉ SEASONING (Penzey's) - curry powder w some ginger would do
2 TB. water
2 lbs. boneless, skinless chicken breasts (about 6 breast pieces)
3 TB. soy sauce
4 TB. peanut or vegetable oil
2 TB. rice vinegar
30 wooden skewers, soaked in water 2 hours
mix the marinade mix w 1 inch cubes of chicken. Skewer & Grill or broil 6 -8 minutes
6 TBl rice vinegar
1/4 cup Vegetable oil
1 Tbl Sesame oil
5 Tbl creamy peanut butter
1 tsp chili paste or 1/2 tsp cayenne
3 Tbl soy sauce 2 Tbl brown sugar
1-2 Tbl minced fresh ginger
1 1/2 Tbl minced ginger
I mix it all in a mini food processor.
