When we lived in Southern CA, there was good fast food place called El Pollo Loco. They had this marvelous citrus marinated grilled chicken. Here is the recipe:

for one cut-up chicken, or bone-in pieces of your choice

1 6 oz can pineapple juice
2 Tbl. Lime juice
1 Tbl. White vinegar
2 large garlic cloves, minced
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. chili powder
6 drops yellow food color (optional)
1 Tbl. Vegetable oil

mix marinade in zip-lock bag and add chicken pieces. Marinate overnight. Grill 25-40 minutes.

Sounds yummy! Do you have to count the carbs in the fruit juice?
you know, I don't because it's mostly thrown out with the marinade
Great! I prefer it that way!
Sounds very delecious
