Love'em! They make great chili, refried beans....
Black beans and black soy beans in particular are among the lowest carb choices for beans. I have some concerns over soy, so I will only eat small servings infrequently, but I do eat black beans more often. Beans are a complex carb, so I find they raise my blood sugar peaking at about 2 hrs rather than at one hour. If I had a pump, I would dual wave or use an extended bolus for beany meals. My experience with beans is also that I have more of a total blood sugar rise than would be anticipated from the counted carbs. Perhaps some of that is due to protein (which I try to count), but I also think that I cannot truly subtract all the fiber. I still cannot eat a bean based meal with more than about 30g of carbs and have confidence in my ability to bolus properly for the meal. At least some of the fiber is actually digested and absorbed, leading to a blood sugar rise.
I've been eating edamame lately. It's the snack kind that you eat raw, right out of the bag. On the package it says to consume them within a week of opening them. But it's a huge bag, so there's no way that's possible on my own. I've had them over a month and they seem fine. Do they go rotten fast though?
