We could add re: peanut butter -- for a really low-carb and healthy version of PB, try Smucker's all natural regular or crunchy peanut butter. It's delicious and lower in fact than regular PB.

Also try:

Raw cauliflower florets dipped in a bit of Ranch dressing or dip (low fat if possible).

Rice Cakes -- cheddar flavor, and

Melba Toast (6-8 pieces) w/ regular or chive-flavored whipped cream cheese

Plain popcorn - up to 3 cups is 15 g cb
Your cauliflower idea reminded me of my current faves......roasted veggies. Cauliflower or asparagas are great drizzled with a little olive oil and sea salt, roasted at a high temp till brown and served with dip. Most veggies take 45 min to an hour, but the asparagas only needs 10 to 15 mins.

I just had s small bowl of frozen blueberries with ricotta cheese, a bit of salt, and splenda, Sprinkled with Granola. Hummmmm

Ok, in addition to diabetes I have CKD and must restrict protein and potassium. What can I snack on?
Oh, but here are some good snacks I have discovered before the whole CKD issue. Rice cakes with just about anything, and cinnamon raisin toast with lowfat ricotta cheese spread on it, sprinkle on splenda or other no sugar sweetener, and pumpkin pie spice. YUM! For something extra special, I sometimes added sliced banana on top. Try it and let me know what you think!

I recently tried Morningstar veggie products and they are pretty good. Their Garden Patties are pretty tasty and only have 9 grams of carbs!!

Also, try the new Blue Bunny Sweet Freedom®, Ice Cream Bar Black Raspberry and it only has 9 grams of carbs. Wow!!

The thing I always miss on low-carb is something crunchy. I don't like pork rinds, just seems yucky to eat a pig's skin......I grew up on a farm! Anyway, a good low-carb crunchy snack is to take a slice of cheese, it has to be regular full-fat cheese, cut it in like 16 small squares. Cut a piece of parchment paper the same size as the turntable in your microwave. Take the little squares of cheese and place them around the outside edge of the parchment paper, sort of like the numbers on a clock. Microwave for around 50 seconds, this will depend on the wattage of your microwave. The little cheese squares will sort of "puff up" but when they cool they'll be hard, sort of like cheez-its. These are very good.

If you want a great tasting crunchy snack then Flax & Snax Wild cherry nut Granola = 1 total effective carbs per 1/2 cup GREAT TASTING. The only problem is that it cost $7.49 a 9 oz bag. they have other flavors. I have look around and the $7.49 seem to be the cheapest. I buy all my low cards from www.netrition.com they seem to have everything and at the best price and only $4.95 shipping no matter the order size, my last order was over 80 lbs

I don't know if this is "crunchy" enough for you, but I make asparagus fries, which are now a hit in my household. Spread asparagus spears on a baking sheet and coat them in cooking spray. Sprinkle on a little salt, pepper and garlic powder (or pepper and garlic salt), and broil for a few minutes. I do it in my toaster oven. The tips get crunchy and the stems still retain a nice snap.
