(This is not a low carb only thread.  Anyone can post in here... as we can all get ideas from each other, or adapt an idea to our specific needs.)

I have a leftover dish of "hot punjab eggplant" (eggplant, tofu and seasonings/sauce topped with red pepper slivers and cilantro) which I serve with a couple "pappadums" a new discovery-crispy little flat disks I'm going to try for an Indian pizza recipe next week. I love this new "Indian inspired" cookbook I found at a garage sale recently.

What is an egg crust, Lizmari?
Baking an egg base, in the oven, similar to a souffle or quiche, but without the crust, and then putting your toppings on top of that.
that sounds good what do you put on it
Marinara, pepperoni, mushrooms, red onions... cheese... the usual stuff... lol or whatever fun stuff we may have on hand. :)
Lizmari can you tell me what you put in your egg base?
Here are two great low carb pizza recipes. Carb counts not included because it depends on the sauce & how much is used.

PIZZA

Crust:
4 oz softened cream cheese
3 eggs
1/3 cup heavy cream
1/4 cup grated Parmesan cheese (fresh is better than the powdered stuff)
1 TBS chives
1/2 tsp oregano
1/2 tsp basil
1 tsp or more granulated garlic (more flavor than garlic powder)
2 cups shredded cheese (mozzarella & mild cheddar)

Topping:
1 cup marinara or tomato sauce
1- 1 1/2 cups shredded mozzarella
Toppings

Preheat oven to 375 F/190 C

Lightly oil a 13x9 glass baking dish

Beat together eggs & cream cheese until smooth.
Add cream, Parmesan cheese, herbs & garlic.
Put mozzarella/cheddar mix in baking dish.
Pour egg mixture over cheese.
Bake for 25-30 minutes.

When crust is cooked, spread tomato sauce, mozzarella & any toppings on top. I sprinkle a little Parmesan, basil & some more garlic on top. Bake until bubbly.
Let stand for at least 5 minutes before slicing. Quite rich & filling.

CAULIFLOWER PIZZA (doesn't taste like cauliflower)

Crust:
2 cups grated cauliflower, cooked (grate first, then cook)
2 eggs, lightly beaten
2 cups shredded mozzarella
2 tsp basil
2 tsp oregano
4 tsp parsley
2 tsp or more granulated garlic (more flavor than garlic powder)

Topping:
1 cup marinara or tomato sauce
1- 1 1/2 cups shredded mozzarella
Parmesan
Toppings

Preheat oven to 450 F/232 C

Lightly oil a baking sheet.

Combine cauliflower (or zucchini), egg & mozzarella. Press evenly on baking sheet. Sprinkle herbs & garlic on top. Bake 15-20 minutes.

Add tomato or marinara sauce, cheese & any toppings to cooked crust. I sprinkle a little Parmesan, basil & some more garlic on top.

Place under broiler at high heat until cheese is melted. Let sit for a few minutes before slicing.

I'll have to give these a try. Haven't had pizza in almost a year :(
I've made the cauliflower pizza several times and I cannot get the crust to be crispy no matter how hard I try. Any tips?
