Hi Maria: Most recently, my favourite salad combination is modeled after Panara Bread's Fuji Apple Chicken Salad, which includes freezed dried apple chips, goronzola cheese and pecans:

Chicken strips, romaine lettuce, tomatoes, balsamic apple vinaigrette dressing (soybean oil, water, apple juice concentrate, white balsamic vinegar, cider vinegar, olive oil, lemon juice concentrate, garlic, field greens (may contain any of the following: tango, lolla rosa, red oak leaf, baby romaine, green oak leaf, baby red romaine, baby red chard, red mustard, tatsoi, mizuna, frisee, arugula, radicchio, curly endive), red onion, gorgonzola cheese, apple chips, and pecans.

Thank you Lucile K - this sounds like a very nice recepie. Well done on your good blood sugar results. Saw your message re: that you had cut quantity of nut oils. I used to eat lots of walnuts + have found that when I cut them out my results are better to.
