I have been experimenting with different breakfasts to avoid my post-breakfast spikes and haven't found anything successful. I am Type 1, on the pump.

I'm curious to hear what others eat for breakfast!

same here egg whites and maybe turkey sausage very lil bit no toast or bacon other wise my sugar flies up i eat broccoli and coli flower for lunch maybe berries salmon for dinner and more veggies other wise sugar spikes its so fruterating i can t eat muchi want macaroni salad or speggeti but even the wheat has 40 grams of carbs some fiber lowered that a little

I like to cook cauliflower till just slightly soft and add spaghetti sauce over it, this is a good substitute for pasta. I imagine covered with cheese sauce would be like eating mac and cheese.

Two egg and vegging frittata. Every day. Forever. Boring, but I've got it figured out at least.

How do you have time in the mornings to make it? Do you make a whole bunch on the weekend and pop them in the microwave?

I make them with turkey sausage for fewer calories and bake them for less time than the recipe states (about 22 minutes). I put them in the freezer, then pop one into the microwave for about a minute. Easy option for breakfast!

That looks similar to something my local cafe makes called a "Spicy Egg Mountain" - I can't remember if they use bacon or sausage but they were glad to make a vegetarian version for me (and charged me $1 less!) It just "felt" more substantial than the same ingredients in a different form. I never even thought of using muffin tins. They are on my shopping list. Only thing I would do different is make them fresh, but then I have the time to do that!

They are definitely best right out of the oven!

I think there are any number of things that could be added for some variety, but so far, I've been happy with the straight recipe.

I've found that adding each ingredient to the muffin tin indivually allows for more even muffins. Last time, I beat the eggs and put that in the tin, then added the cheese to each one, then put in the sausage and gave each a little stir.

Wow, you could add sausage to some different cheese in others, some spicey, some with ham, cook all at one time in the tins - you guys are brilliant!! I am going to make Fritattas for the week!!!!!

One Question - do you think you could use tin liners? like for making cup cakes or would that stick too much?

im an adult honeymooner and low ish carbing. i have about 30 grams at breakfast, usually 5 breakfast cookies/biscuits (21 grams) and a yogurt (5 0r 6 grams) and a cup of tea. 0n days when im feeling piggy, two slices 0f toast (20 grams) with butter and a yogurt (5/6 grams). all on one unit of novorapid.
i dont have any weird DP/spikes yet, hoping i can say that for a while....when i read all 0f the real diabetics with their spikes and highs and craziness it makes me think its going to get so much harder. tell me its not. PLEASE!! sometimes i think it would be great if we were just droids, not having to eat at all.
