Permalink Reply by Lila on December 26, 2010 at 5:00pm Thin-crust pizza as it is served in Italy proved surprisingly manageable for my BG.
I had a standard-size pizza with buffalo mozzarella, parma ham and porcini mushrooms at dinner. I left the rim of the crust behind. I estimated the carb count at 60g and bolused accordingly. Two hours later, I went low! I woke up during the night to check again as I know pizza can give you a nasty spike later. All OK. FBG next morning was in the 80s.
I almost wept, I was so happy as I thought I would never be able to eat pizza again.
I guess it only works with made-in-Italy pizzas as the crust is incredibly thin and the toppings are minimalist.
