As per my usual, I've been going over this year's Passover guide on
Kosherquest. The end of the section of items not requiring specific KfP hechshers has a header,
"NUTRITIONAL PRODUCT INFORMATION (Diet, Organic Nitrite-Free, Lactose Reduced, Low Sodium, Gluten Free etc. Foods)", followed by a bad URL to what looks like it should have been a previous year's guide on the OU site, and the phone number for the Jewish Diabetes Association ((718)578-4180).
The correct link for the OU site is
http://www.oukosher.org/index.php/passover
Doing a search for "diabetes" on the OU home page brought me the following diabetes-and-Pesach link:
http://www.ou.org/shabbat_shalom/article/pesach_an_annual_nutrition...
There are slight variations between the coverage on the OU page, the
Jewish Diabetes Association's site,
http://www.jewishdiabetes.org and in the Pesach guide on the
Jewish Friends With Diabetes site,
http://www.friendswithdiabetes.org. The OU article includes some low-carb recipes from the cookbook
Enlitened Kosher Cooking, available through the JDA Web site.
