Let's start with a little Bach :)
-Erbarme dich, from st Matthew's passion - I like the rendition by Damien Guillon
-Christi glieder, ach bedenket, from the Christmas cantata Bereitet die Wege, bereitet die Bahn (partial to Matthew White here)
-Ich habe genug from the cantata by the same name - I love Matthew White in this one but I like Ian Bostridge too
And a little Händel....
-Practically all of the oratorio Theodora, which has a beautiful story and even more beautiful music...I recommend the Glyndebourne DVD version and the CD recording by Paul McCreesh/Gabrieli consort & players
Then I also really like this group from Corsica who sing a lot of religious music in traditional polyphony:
