I got this one from my wife. It has become such a staple for me, I felt compelled to share it. Not sure if others already do this. It's basically an oatmeal recipe, but I love it.
Vary this to meet your tastes, but I start with 3/4 cup of oatmeal. Cook it like you would with just water. Don't add sugar, salt, butter, etc. Once cooked, I add 6 dried apricots (sliced), 3 prunes (sliced), 10 pecan halfes (chopped) and about 1/4 cup of milk. 68 grams of carbs. Watching my BG on my continuous meter I get a flux of about 40mg/dl or so. Nice and mild. No spikes. It tastes great! I even eat it for lunch sometimes.
