I try and stick to Vegetarian recipes rather than recipes that include meat and then either just skip the meat or use a meat substitute. I prefer recipes that use the flavors and freshness of a vegetarian style diet. I highly recommend Green's cookbooks. ("The Greens cookbook" and "field of Greens") though of course the recipes have to be vetted for carb content.

I'm not a fan of any alternative meat(tempeh,tofu etc) except seitan but I'm trying to find a way to make seitan can taste more better.

catlover.........and others....try tempeh, tofu in recipe next time it calls for chicken/turkey and ket us know how it feels.

missrobbie- I didn't know I was a flexitarian. But I have been 1 for over 30 years. Long before I became a D. I eat lots of veggies and fruit and chicken, turkey and fish. Also, dairy products and whole grains. I don't think that I could go back to eating red meat again. I don't even like the smell of it any more. There are many foods that you can eat and not miss red meat.

I hope Flexitarians/Pollo-pescetarians can join this group (Flexitarians are omnivores who predominantly eat a plant based diet but also eat animal meat occasionally ). Starting 2012, I'm going to try to give up meat except chicken/turkey and fish. My "diet" will be a mediterranean type diet. (focus on veggie/fruit/ whole grain and small portion of meat(chicken,turkey or fish)

Hi everyone. If anyone has the time, please message me. I am not vegetarian but am seriously considering it just because I am an animal lover. Worried about how that will work out with my diabetes. How does it affect your diabetes management? Does it cost a lot more than not being a vegetarian? What kind of substitutes do you use for meat?

sounds great! thanks for sharing. here is one that good for munching ...chickpeas...olive oil, italian spices or ..bake in oven for 20-30 minutes, toss a few times and eat for snack or on salads, etc.

I just sent the Lentil Roast receipe. It serves 8, 3/4 cup per serving. 233 calories, 6g fiber, 10g prot(17%), 106mg Sod., 28g Carb., 0mg Chol., 9g Fat(35%), 45mg Calcium, 3g Sugar. May alter seasonings to your liking. I add more garlic and onions.
