I am looking into eating more vegan, raw food to help me control my type 1. I am currently on DR. Bernstein for 1 year where 0 carbs and 0 fruit is allowed, only veggies and some protein and have seen great improvement in my blood sugar readings. I am exploring adding more veggies into my diet because I feel so much better eating that way, but am scared to death to eat any fruit, it just raises my glucose. If anyone can give me their opinion or share their success I would love to hear it.
Thanks Everyone!!

My 4 year old son was diagnosed t1 in May of this year and we became vegan immediately. I would say we eat a balanced diet of fruit, vegetables, grains, legumes and beans. Yes, the fruit raises the blood glucose, but if eaten raw it also has a ton of nutrition to it. For my son, it would be difficult not to include this. I have found that kiwi (eaten with skin) doesn't seem to affect his bs as much as some of the other fruits. We eat all fruits, raw and organic, with the exception of cooked applesauce that I make from scratch.
Good luck - Kj
