How important is it to go gluten free with celiac?

Started by Shaylyn. Last reply by daydreamer630 May 26. 1 Reply

I was tested for celiac 2 years ago and it came out positive but my doctor didn't push the issue of going gluten free so I haven't. I've been reading about it online lately and I feel like going…Continue

Besides eating gluten free food, do you also eat non GMO food?

If you stop eating gluten, then have a test for celiac, your result will be negative whether or not you are actually a celiac. If you are going to have a test for any reason, then you should do it now before becoming gluten free. There is actually quite a bit of info on going gluten free if you scroll down, and on this site's other group, Celiac and Diabetes.

HI Latvianchick,

I'm glad you got your glucose tablet keychain from the Free Stuff group.

Here's a link to some info on gluten free eating. Your symptoms sound very similar to mine and I don't have an "official" diagnosis either. Careful about some of the gluten free subs-they are often high glycemic so I've given up most of them and am sticking to gluten free grains like quinoa and am eating more beans for my carbs.

I wonder if anyone can tell me where I can find carbs that do not contain gluten. I have always suffered bloating and stomach cramps which go on for hours after my morning two slices of toast for carbs. I do not like porrige much. Tasteless. I have been told I have to eat carbs at each meal. I have not been diagnosed officially as caeliac but am keen to try a gluten free diet to see if there is any improvement. The toast will shoot me up to 28mmols even if I started low. Takes most of the day to get it back down again.

I've always noticed that certain wheat based starches like pasta or even low carb tortillas shot my sugar up. wondered what that was about. Went to a 4 day conference a few years ago and all the food served was gluten free. When I got back home, I noticed an odd stomach discomfort that wasn't there those last 4 days. Finally connected it to gluten containing foods. Switched to spelt products and that helped. But just this last year, I started getting terrible cramps/bloating/headaches when eating gluten containing foods so I finally gave it up in early Dec. BTW, had standard blood tests for celiac and they came back negative. I think I just have gluten intolerance. But I can't even cheat. I ate a piece of rye toast a few weeks after going GF and I felt so bad I thought I was gonna die!

Found a great gluten free, low glycemic cookbook recently. A word of caution. This is not a low fat or low calorie cookbook. However, everything I've tried from it has agreed immensely well with my blood sugar. Plus the recipes are delicious.
Recipes use a lot of nuts and flours like amaranth and quinoa which are not inexpensive

re; the wine- I treat it like any other food. Count the carbs and most definitely consume with food. Generally speaking, a 4 oz serving of wine that is not sweet is 4 carbs. I have a few typical wines saved under 'favorites' in the Ping/pump food list. I've gotten over not having beer- which is a good thing. Not good for BGs or the waist line! I do enjoy hard ciders very much now. Low in alcohol, naturally gluten free, and yes- carbs- about 14 per regular bottle.

Maggie, I see you are a "retail wine buyer." Happily, wine works very well, for me anyhow, since the alcohol cancels out the carbs. (I like Bards Beer, too, but it takes a little insulin.) Restaurants are a challenge for me, but at least most of them have salad meals.

I stopped eating wheat/gluten to reduce all over joint/skin/respiratory inflammation. It works. I also thought that BG would be easier to control, they are. So- no sweets- they give me a headache. No wheat, and now find that eating mostly veggies makes BG management even easier (more level) and I am feeling better still. But it can be a challenge!
