In theory maltitol is supposed to metabolize to less than 100% glucose, but in practice, when I have eaten ice cream made with maltitol I have seen blood sugars almost as high as regular ice cream. The same was true comparing the Russell Stover candies with maltitol vs the real thing. Very similar blood sugars, the main difference was that the peak occurred later.

As I understand it, people vary in the extent to which they have the enzymes needed to digest the sugar alcohols, leading to different results on an individual basis. This has been discussed online for years and I have read reports from people who saw no rise, who got the runs, who got a major rise, who found maltitol worked for them, etc. Usually maltitol seems to work for Type 2s with a strong but slow 2nd phase insulin response.

My experience with xylitol is that though it doesn't raise my blood sugar it causes intense hunger cravings after I eat it--just a few breath mints with xylitol and I go into "snack" mode for a while. So I avoid it.

I personally would rather eat occasional small doses of real ice cream than the fake kinds. They all have a lot of calories but ice cream is not all that hard on blood sugar compared to most sweet treats. There is so little difference in impact of the fake stuff opposed to the real stuff that I'd rather just have the real stuff. But very infrequently. And with insulin.

For people not using insulin my guess is that the metabolic effects of both kinds are similar, too.

The real problem with ALL ice cream, BTW, is that the portion size on the label is unrealistically small. By the time you have a portion equivalent to what a real person eats you have 2 -3 "servings" with huge calorie counts.

hey arielle i know byron personally and i just wanted to assure you that his intention was not to use the site for advertising/market research. :)

I didnt see whatever post you are talking about but i did want to say that as T1 i disagree with your last comment. 15g of white sugar affects my BG differently than 15g of pasta for example. the white sugar kicks in WAY faster. ive especially noticed that when i've eaten 30g with either type of food. maybe you havent experienced the same thing ever???

I agree with you that artificial sweeteners should be avoided whenever possible! they are horrible for you! then again no one likes carb hangovers! so i guess we each gotta choose our poison! right?!?

Byron: I'm sorry but it really feels like you're using this site for advertising and/or market research, and it looks like your original post has been deleted, which makes me think an admin saw it in the same light as I did. In answer to your question, you are absolutely wrong, a carb is a carb. 15g of carbs have the same impact on blood sugar whether they are in the form of a piece of bread or a few tablespoons of white sugar. Personally, I try to avoid artificial sweeteners whenever possible, as I think they are horrible for anyone, diabetic or not. I would much rather have the real thing and eat less of it or bolus more for it.
