Blood Sugar Adventures : three years on with diabetes

"Getting" diabetes ( albeit the Number Two kind) was a terrible blow for me. Here's a favorite low carb soup. Would be great with your sourdough bread. Yes, it has tomatoes:) Hope you like it.

ROASTED RED PEPPER & TOMATO SOUP

2 tablespoons butter
2 tablespoon olive oil
2 12-ounce jars roasted red peppers, drained & coarsely chopped
14.5 ounce can fire roasted tomatoes
3 cups chicken broth
1 cup red onion, chopped
4 cloves fresh garlic, minced
1 TBS dried basil
1 TBS dried oregano
1 TBS dried chives
1/2 tsp paprika
freshly ground pepper, to taste
1/2 cup heavy cream

Combine everything except the cream in a large pot. Bring to a boil then simmer over low heat for 20-25 minutes, stirring often. Puree in batches in a blender. Return to pot, stir in the cream & adjust the seasonings to taste.

Great with shrimp or cooked seafood added.
