Check out the blog Elana's Pantry. Elana has wonderful recipes for baking with almond flour. She also has a cook book. I can't eat wheat so I do make her almond flour nutty bread. It doesn't spike my BG but it's not the same as wheat bread. Sigh.

I find that when the bread is high in fiber it helps not spike blood sugar as much.... a lot of the typical brands are making high fiber now. Any whole wheat and high fiber good!!

Don't feel bad. I struggle too...daily! I just wish I could eat like I want to. I guess it just comes down to teaching yourself a NEW way to eat. I'm still working on that. March will be one year for me, so I'm new at this. Still working out the kinks. Right now I'm just trying to concentrate on "moving" for 30 mins a day. I started off really well, but then fell off..I've come a long way though..We'll definitely keep in touch!
