Flourless peanut butter cookies

These are just so delicious. You can add choc chips if you like, or coconut, or chopped nuts.

Ingredients

1 cup peanut butter
1/3 cup liquid stevia or substitute
1 egg

Directions

Preheat oven to 350 degrees F (180 degrees C).
Combine ingredients and drop by teaspoonfuls on cookie sheet. Bake for 8 minutes. Let cool. Recipe doesn't make very many, so you could double recipe as you wish.

I have had the most dreadful cold all week, the chemist refused to let me buy cold/flu tablets since they raise the blood pressure of diabetics so much, so I have been going it alone. I have actually never felt more alone in my life, no lemon and honey, hot blackcurrant drinks, no comfort at all, just me and a few boxes of tissues. Hi Maureen, thanks for your comment. I am definitely taking it one day at a time; right now I don't feel too well. My antibiotic, Doxycycline, keeps me off-balance, but I'll be through with it in 5 days and then should feel a lot better. Here in my area, we're having snow and frigid weather; I understand Australia is hot! I hope you and Renae are staying comfortable. Trudy
