Hi Steven-

We have alot in common! I turned 50 last December(it's great), have type 2, I'm controlling it with exercise, good eating habits and have lost 40 lbs. My sister lived in Palm Harbor, Tarpon Springs. Her daughter worked at The Harbor Spa (fancy,LOL).
I live in Atlanta, Ga., retired from BellSouth in April, and now able to enjoy life again. Take care, Sandy

Thanks for the add, Steve. So, it is indeed salmon---Chinook, to be exact, which was affordable not too long ago, but which is $29/lb this year and only Alaskan is available because the salmon runs here have shrunk horribly. We will splurge and have it at least once this summer anyway! It has the strongest, best flavor. Atlantic salmon is mostly farm bred and quite good, but long-term there are serious concerns that the farm-bred stocks are polluting the wild gene pool. Salmon is a huge issue out here, because it is a "canary in the coal mine" for NW ecosystems---the very landscape, the drinkability and very availability of water, for instance.

The Weber will be perfect: Skin-side down for a couple minutes to loosen the skin. Peel skin off and flip them over for about 4 minutes, then either keep cooking or flip again and keep cooking. My sweetie said to remind you that over-cooked will get rubbery. Err in the other direction while getting the timing right for your needs---you can always throw them back on for a minute or two!

Baste with a simple mix of good olive oil and tarragon and lemon juice---also honey if you can eat it. I'm not on meds yet, so since I've only got food and exercise to work with, we eliminated the honey when I was diagnosed. Kiwis and blueberries scattered on top. DLH (my hubby) works from the basis that if you've got a gorgeous hunk of meat or fish, keep it simple to enhance the flavor and let it shine through all by itself.....

Insurance Companies Changing Supplies

Well ever since I was diagnosed with Type II, I have always been in control of the products I use. I always checked with my insurance to determine the best course of action. Now my supplies are provided free to me by my employer and administrated by the insurance company. Feeling pretty good

Well, I had my doctor's appointment this week. Don't have the blood done yet but I am betting my A1C is done. I have lost 5 pounds since January and my blood sugars are almost dead on inline. I met the new Physicians assistant this week too. Wow, what a wonderful lady. It felt great to discuss things with her. I am a Patriot Guard Rider (patriotguard.org). Acheivements

Well, I have been watching what I eat for a bit. Staying away from the second helpings. I lost a little weight. By blood pressure is down a bit and my glucose readings have been great. Today I hit 99. I haven't seen a 99 in more than a year. I am feeling better. My knees aren't hurting me as much. I feel good about all of this. I just had to share.

Bike Week!!

Well I am all packed and excited. I am finally going to my first bike week in Daytona, FL. The weather is going to be perfect all weekend. I leave tomorrow and return next Tuesday. I have a room reserved on the Atlantic ocean. This is going to be a blast. I will fill everyone in when I get back. Well maybe not all the details :o)
