in the area where we live buckwheat pancakes (link) are very popular & traditional. they are thin with a crispy edge and are mostly eaten with a savory filling of your choice. they're very low-carbs & fat, also suitable for gluten intolerant et celiac people if you add one egg and omit the small portion of wheat flour (which we do all the time) and most restaurants here do, too.…
