So I had the day off work and I thought I'd be really organized if I planned a week of meals, and got the grocery shopping done.
My menu plan is:
Friday (today): Roast turkey dinner, with mashed potatoes, cranberry stuffing, gravy, mixed roasted vegetables and tossed salad. I think to myself, oooooh! Leftovers galore to make future meals!
Saturday: Alaska King Salmon with basmati rice, steamed asparagus with hollandaise sauce and tossed salad
Sunday: Turkey dinner leftovers re-heated
Monday: Rosemary lamb chops with minted baby potatoes, peas and salad
Tuesday: Turkey vegetable stew with dumplings
Wednesday: Pork ribs with BBQ sauce, rice, butternut squash and salad
Thursday: Chicken with pasta marinara, garlic bread, marinated veggie salad
Ok. Back to the turkey. I got home from shopping early enough to stuff the bird and get it into the oven in time for dinner. At 4:30 p.m., my sweet other half came home for a quick 1/2 hour break from work, after which he leaves directly to another job (he's a musician), and won't be home until 2:00 a.m.!!!! It completely left my mind that he had a gig tonight! So just who is the turkey, lol!
Oh well. At least I'm organized for the week. Anyone want to come over for dinner?
