A culinary abortion-but with good intentions

I tried to make sweet potato pancakes the other day. Well lets just say what was birthed in the ol’ frying pan was anything but edible or pancake like.
I really love potato pancakes, but well I guess I will have to just remember how my grandma use to make them, and never try that again, or at least try a different recipe. So any one have one they care to share?

Gerri makes some almond pancakes which are really great, and extremely low in carbohydrate. :)

try it with coconut flour. And some egg added in.
