Last night my friends and I attended my school’s Junior/Senior Formal at a hotel in Boston. It was basically prom for college students + an over-priced cash bar. Long story short, we had a great time. When I first read the email that invited us to the dance, I noticed one glaring detail that I couldn’t ignore: dinner would be a buffet. Buffets are great to satisfy meat eaters and usually include not one, not two, but three different types of meat-based entrees. There’s always a chicken, always a beef, and usually a fish. Buffets are also great to satisfy regular vegetarians. There’s always a salad with a cream based dressing and cheese, always a pasta, always green beans, always mini-potatoes soaked in butter sauce, and a basket of rolls. Vegetarians can also indulge in the dessert table, stocked with cheesecake, tiramisu, and layered cakes.
As a vegan and a diabetic, I knew this wouldn’t fly. Read on...
