These are just so delicious. You can add choc chips if you like, or coconut, or chopped nuts.

Ingredients

1 cup peanut butter
1/3 cup liquid stevia or substitute
1 egg

Directions

Preheat oven to 350 degrees F (180 degrees C).
Combine ingredients and drop by teaspoonfuls on cookie sheet. Bake for 8 minutes. Let cool. Recipe doesn't make very many, so you could double recipe as you wish.

yumminess must buy pb. what other things could i use to sub liquid stevia. i live in spain and dont know if i can get that. would any liquid sweetener do? must try these, i love pb!!

Yes, I think any liquid sweetener would do. I didn't know you lived in Spain, always thought you came from the US! There are a lot of flourless peanut butter cookie recipes on the net, you just need to substitute the sugar for something more diabetic friendly.
