I need recipes for sweet dishes and lighter !!!:)

i was wondering whether some of you could suggest me a few recipes. i have started myself to cook lunch dishes and deserts but beacause of the light sugar i used , we ended up eating testless meals.

My wife does some great stuff. Chocolate chip cookies that are as good as any with sugar but very low carb and sugar. She has a lot of recipes and is starting to add them to her blog at http://thediabeticunderground.com if you want to check it out.

There are also some good cake and brownie mixes from Pillsbury out there that are sugar free.....

Lower Carb "cheese cake"
1 cup chopped (in the blender) walnuts
2Tbs. butter
1/3 cub splenda
1 brick cream cheese softened
1 tub coolwhip

melt butter and toss with walnuts. Press into a pie dish, bake 350 for 5 min. cool completely.
blend cool whip, cream chees and splenda with a mixer. Spoon into cooled walnut crust, chill at least 4 hours. Garnish with sliced strawberries if desired.
Makes 8 servings.
Taste great, is lower carb and high in fiber because of the walnuts. I usually bolus for 15 carbs for 1 serving.

Are you looking for low calorie, low carb or both? Are there any dishes in particular you'd like? Three day weekend coming up and I'll have some extra time in the kitchen, happy to try a few things out. With all the other stuff we put up with, no one should have to face dull food.

mostly low carb!
i don't have special preferences about the dishes, i trust your taste :-)
we live in different countries, so your suggestions will be interesting and something new for me, no matter what!

Respectfully, Daffy. We all have different carb tolerances and many of us do best with very low carbs and have done so for years.....the upper end of your scale in particular is an average of 200 and an A1c of 8.6---IF I did the conversion right. These are not numbers that are worth maintaining. Most of us do better long term if we moderate carbs at least a bit. Many docs don't believe in lo-carb eating even though there is now lots of evidence that it works. You might like to connect with our TuD member Hana Rous---a countrywoman of yours......
