Note to Self -- White Bread is the Devil!

I'll try to remember this little lesson. I was out of whole grain sandwich thins, so I made my sammy with a regular old white hamburger bun. 200+ at one hour, 116 at two hours. Didn't really need that rollercoaster ride today.

Same here! White bread = Evil (as least as far as bs is concerned). Plus it is so easy to eat! I LOVE freshly baked white bread with butter and jam. Have to avoid it though. :(

However, I do bake my own bread; gluten free and with a good measure of almond flour added, and coconut oil. I am able to eat a slice of this and to cover it pretty successfully. :) And the bread is heavy enough to be satisfying and not tempting to have too much (aside from the fact that I also make it for my daughter and need to keep enough for her!).

When I was a kid I was an extremely picky eater, but white bread with butter was always something I'd go for. Often, after I'd sat through an entire meal without eating, my mom would say, "Go get a piece of bread." I was always so pleased when that would happen! And yes, fresh baked is the best - in a weak moment, I'm sure I'll return to Satan's bakery once again - maybe I'll be your first customer Gareth. Although, I've read that sourdough is actually fairly low on the glycemic index, so maybe I'll go for that next time.

Did the sandwich thins have the same number of carbs as the bun?nm

Good question Kathy - the bun had more carbs, but I bolused for all of them, which is why I was down to 116 by 2 hours. I think the white bread shot me way up then crashed down, whereas the whole grain thins are a much more gradual release. Of course, I keep reading that wheat is the real problem, but I'm just not ready to give it up yet!

SO BAD... and yet so good :0( I can't have white bread either, or a white potato. Its ok to have weak moments Shawnmarie, just not often. I am a sucker for cereal.

I'm now thinking my BG response was a combination of issues, including hormones -- aren't they fun. Never seems to be just one thing!
