Comment by Brian (bsc) on November 30, 2011 at 1:25pm I like to use vinegar or other acids in the preparation of greens. I think it adds to the flavors and it also helps increase the amount of calcium you absorb.

I'd be careful with the type of vinegar as you may be adding much more than acid, however I use a lot of fresh lemon and lime in my cooking both juice and zest. You are right on as it is a great PH stabilizer for your GI system and fits well into many flavor profiles.
