Sure sounds like you've got a good handle on things and figured out what works for you. I haven't yet found quite as much consistency as it sounds like you have. I have been trying to stick to whole grain breads, and in small amounts. More vegetables than I used to eat-- I have been counting the carbs of veg, but am wondering If I should be, as they don't seem to cause the same type of rise that other carbs do.
I'm not taking any basal dose at all right now, only bolus with meals. Even without basal I tend to run fairly low glucose levels when fasting (60s are not uncommon for me with no basal). I think thats just what has always been normal for me, as now that I understand the symptoms of low glucose, I realize that I have felt them forever when I was hungry.
I take novolog with every meal. I generally also keep the carbs to 100-120 or so a day, although I'm not ultra obsessive about keeping them low. I feel like I've done it right if I keep my post meal numbers under 140, which I manage most of the time.
Had an A1C of 6.8 today, so it's definitely going the right direction... was essentially twice that 9 weeks ago. I also found that walmart sells home A1C test kits that you mail in to get results for only like $9 (they are a little hard to use though)... I snatched up a few of those, the result it gave me was right in line with what my doctor's test said.
Glad to meet ya. Have you gotten back a follow up A1C since the time of your initial diagnosis? I was 11.1 on April 2. 8 Weeks later on May 29 I was 7.2-- coming down nicely. I'd be interested in comparing notes with you on what type of diet you are finding keeps you best balanced... I'm still learning a lot myself, guess that proccess probably never really ends.

Same age, diagnosed type 1 on same exact day as you. Going through exact same things, probably have a lot to talk about
